Description of the wine
- Ideally located in a 17 km long natural corridor between the Corbières mountain range and the first foothills of the Pyrenees massif, Maury is, simply by its terroir, an exceptional wine.
- The sun, a fundamental element of the Mediterranean climate, which shines 280 days a year, is one of the qualitative characteristics of the production of Maury.
- The low yield (27 hl/ha) is a guarantee of its quality.

Vinification and aging
The wines are harvested when they are perfectly ripe. For this, regular tastings of the berries are done before the harvest.
The harvest is manual and the grapes are destemmed upon arrival at the winery. The vinification is traditional and the mutage is carried out "on grain", that is to say before pressing (addition of alcohol of wine origin in the must in order to block the fermentation).
This technique can only be carried out if the harvest is of high quality. The vatting is long (around 30 days), then a delicate pressing is carried out in a pneumatic press in order to obtain only the best juices.
The wines are aged in barrels of different capacities (225 or 350 liters) for 1 year. Finally, they are refined in bottles in an underground cellar for 12 months.
Tasting note
The dress is deep with purple reflections.
Powerful nose of black fruits (blackberry, blackcurrant) and
prunes.
Very fine mouth with good length and a
spicy finish. Notes of “stewed” fruits with a very
beautiful liveliness.
Conservation
Keep away from sunlight and at a constant temperature
