Ballerina for Candlemas
According to historians, the celebration of Candlemas or "candle festivals" has pagan roots in an ancient fertility cult. The event took place in a cave in Rome in mid-February, during the first sowing period, in order to celebrate Saturn around the winter solstice.
According to popular belief, peasants would walk through the fields carrying torches to purify the earth before sowing. It was also said that the flour of the year would be lost if it was not used for Candlemas pancakes. Eating pancakes would therefore be a tribute to the rebirth of nature, to the cycle of seasons and more precisely to the coming spring.
Many traditions related to crepes have emerged, especially in France. One of them involves holding a gold louis in one hand and flipping a crepe by tossing it into the air from the pan. An elegant, unfolded fall of the batter is said to be a good omen for the household's finances. In addition, the most superstitious will keep the first crepe in a cupboard: there, it is said to bring good luck.
For us, Candlemas is above all an opportunity to get together as a family around mom's pancakes. And what could be more appropriate than opening a bottle of Ballerina . Its delicate appearance and aromas of red fruits, brioche and flowers will pair perfectly with your pancakes, whatever the recipe.
