Vinification and aging
Ballerine comes from the Limoux region, an exceptional terroir for the production of sparkling wines that were first created at the Abbey of Saint Hilaire in 1531. This terroir is located at altitude, close to the Pyrenees mountain range and gives this brut rosé its airy side. The vinification and blending of Ballerine, produced mainly from Chardonnay and Pinot Noir, give pride of place to the freshness and tension of this wine and connote the lightness of Ballerine.
Tasting note
The color of the delicate pale dress pays homage to that
sunsets that can be admired from the rooftops
of the Paris Opera Garnier. Radiant, it is endowed with
golden highlights. The delicate bubbles give this crémant
a persistent foam. The nose, powerful and straight, reveals
subtle and delicious aromas, we perceive notes of fruit
red and white flowers. The attack on the palate is precise
and elegant, the aromas are of great complexity.
