Acquired in 2012, this vineyard located in Terrasses du Larzac (300m altitude) is the expression of the forces of Earth and Fire. The characteristic soil of schists and ruffes are witnesses to an intense volcanic past. The wild and preserved landscape gives an incomparable feeling of serenity and freedom that we strive to preserve with biodynamic cultivation.

Vinification et élevage
Château la Sauvageonne Grand Vin blanc 2021: The different grape varieties are harvested separately in order to reach the optimum maturity for each. The vinifications are in fact regulated in such a way as to respect the specific characteristics of the grape varieties and the capacities of the terroirs. The harvest is manual. The grapes are destemmed, cooled to 8°C and sent to the press in order to extract the must. Particular attention is paid to the pressing in order to keep only the first juices of the highest quality. The juices are then more or less clarified according to the desired aromatic profile. The fermentations last between 15 and more than 30 days depending on the degree of clarification and the temperature applied. At mid-fermentation, part of the musts is transferred to 225L barrels or aging on lees with stirring will be followed for approximately 6 months. Finally, after a light fining, bottling takes place quite early in order to preserve the fresh and fruity character of the wines. Château la Sauvageonne Grand Vin rouge 2020: Manual harvests, on low-yielding vines, are triggered on the basis of maturity checks, analysis of polyphenols contained in the grape skins and by daily tasting of the grapes as the harvest approaches. The picking of healthy and ripe berries is an essential aspect in the process of making a Grand Vin. After the harvest, the grapes are traditionally taken to the cellar in the following hour. The berries are sorted and then destemmed before being placed in a temperature-controlled vat. Each grape variety is vinified separately. The maceration period is around 20 to 25 days. At the end of winter, the wines are transferred to new 225l barrels for a stay of between 12 and 16 months.

Château la Sauvageonne Grand Vin blanc 2021: The color has a beautiful golden color. The nose is very complex and extremely fragrant revealing aromas of hawthorn, almond and floral notes of violet and yellow fruits of mango and apricot. The woody side of this cuvée is very delicate with notes of gingerbread and tobacco. The palate is rich and unctuous with plenty of fat, amplitude and a beautiful freshness. Château la Sauvageonne Grand Vin rouge 2020: This Grand Vin with a ruby color and slightly tiled reflections reveals a spicy nose with notes of scrubland and candied fruits. On the palate, it reveals silky and elegant tannins, forming a beautiful balance with the finesse of Grenache, the emblematic grape variety of the region. This wine can be drunk now and heralds a very promising future.
