Vinification et élevage
La Forge 2019: The remarkable quality of this vintage lies in the exceptional quality of the grapes. These are old vines of 80 years in Carignan and 20 years in Syrah. The control of yields (25hl/ha) by using green harvesting to homogenize the load of each vine, thus allows to obtain a "grouped" maturation of the bunches. The harvests are manual according to tradition. The wines are then put in 225-liter Bordeaux barrels in our cellar for a period of approximately 10 to 12 months. We select the best coopers, in order to adapt the choice of wood origins and type of toast, to the potential of each vintage. The wines are neither fined nor filtered before bottling; the bottles are then kept for 12 months before being marketed. Aigle Royal 2018: The vines are carefully tended, with frequent manual interventions (pruning, disbudding, leaf removal, thinning, harvesting by hand sorting), using environmentally friendly practices. The vineyard is established on espaliers, to generate an optimal leaf surface for the ripening of the grapes. The vines are planted at a (relatively high) density of 5000 vines/Ha, which allows for control of vigor and the production of quality wines with low yields. Monitoring of maturity (analysis and tasting of the berries) determines the ideal harvest date to obtain the right balance between aromatic expression and maturity of the polyphenols. The grapes are harvested manually in crates and vatted, after destemming, by gravity. Vatting (fermentation and maceration) for 20 days in open vats with punching down twice a day. Malolactic fermentation and aging in oak barrels for one year. Viala 2020: The harvest is triggered after very precise monitoring of maturity and daily tasting of the berries. The harvest is manual and the grapes are meticulously sorted as soon as they enter the cellar. The Carignan and part of the Syrah are vinified in whole bunches. The Grenache is destemmed and vinified in traditional maceration. After the malolactic fermentation of the wines, the different grape varieties are blended and the wine is placed in French oak barrels for 12 months of aging. We select the best coopers, in order to adapt the choice of wood origins and type of toasting, to each vintage. The wines are neither fined nor filtered before bottling. The bottles are then kept for 12 months before being marketed.

La Forge 2019: With a dark, ripe cherry color, the explosive nose opens with notes of toast, spices and cloves. With great sweetness, the very ample palate reveals powerful and elegant aromas, which evoke jammy red fruits. It is a very great wine with soft tannins, with a spicy length. Aigle Royal 2018: Ruby red color with light purple highlights. Nose dominated by aromas of small berries (raspberry, redcurrant) very intense with some toasted notes. Soft, fruity and finely spicy palate. The tannins at the end of the mouth are fine and silky with a very long and persistent finish on the fruit. Viala 2020: The color is a beautiful deep garnet. On the nose, Le Viala is powerful, it reveals notes of ripe fruit and violet. Very nice attack, smooth tannins, woody notes, beautiful balance, infinite length. On the palate, this vintage is very delicious! Le Viala has great aging potential.
