History

Cote des roses celebrates the Mediterranean Art of Living. Its Languedoc appellation extends along the Mediterranean coast, from the Spanish border to Nîmes, relying on the foothills of the Montagne Noire and the Cévennes.

The soil, which is very varied, is mainly made up of hard limestone from the scrubland, schistose soils but also gravel brought by the rivers and streams of Languedoc.

The climate, hot and windy ("semi-arid Mediterranean climate with mild winter variant") favors the ripening of the grapes and their good health, while maintaining freshness thanks to the altitude and the effect of the sea, which attenuates the high summer temperatures.

Its bottle is unique with its rose-shaped base, created by a young designer from the Boulle School. It is a wine that is offered like a bouquet of roses.

The different grape varieties are harvested separately with the aim of achieving optimum maturity for each.

The vinifications are in fact regulated in such a way as to respect the specific characteristics of the grape varieties and the capacities of the terroirs. The grapes are destemmed, cooled to 8°C and sent to the press in order to extract the pink must.

Particular attention is paid to pressing so as to keep only the highest quality first juices. The juices are then clarified more or less depending on the desired aromatic profile.

Fermentations last between 15 and more than 30 days depending on the degree of clarification and the temperature applied. The particularity of these vinifications lies in the attention paid to the color and aromatic purity of the wines.

Finally, after a light fining, bottling takes place quite early in order to preserve the fresh and fruity character of the wines.
