Vinification et élevage
Coming from a selection of the best plots on the Tautavel terroir, the grapes are harvested manually when optimum maturity is reached. They come exclusively from old Grenache Noir vines with small yield. This vintage can be considered the quintessence of the terroir from Tautavel. Traditional vinification is carried out in cement vats and proceeds to a long maceration of three weeks at a temperature not exceeding 27°C. Maceration must be carried out gently for better preservation of the fruit and aromas. The wine is aged for 12 months in barrels.
Note de dégustation
Beautiful deep garnet red color. Complex nose and powerful, with notes of garrigue, spices and fruits ripe. On the palate, the black Grenache, vinified at low temperature and aged in new barrels for twelve month, perfectly expresses the freshness of the fruits black. In the end, the spicy, liquorice and toasted notes brighten and add complexity to the wine.
Conservation
Keep away from sunlight and at a constant temperature
