Cigalus white 2022 :
The Cigalus estate benefits from a warm and sunny Mediterranean climate ("semi-arid type with temperate spring variant"), allowing for advanced ripening of all grape varieties. The estate is cultivated using biodynamic methods.
Tasting Notes:
Golden yellow color, bright and clear. Intense and complex nose of ripe citrus fruits (grapefruit), white peach, honey, dried fruit with a toasted note. Full and silky mouth, ripe, ample with notes of vanilla, toast, butter and exotic fruits. Beautiful length in the mouth.
Domaine de l’aigle Chardonnay 2022 :
Domaine de l'Aigle is located near the village of Roquetaillade, near Limoux, at the foot of the Pyrenees. The estate covers some 47 hectares, with vines planted at altitudes of between 250 and 500 metres, making it one of the highest vineyards in the Haute Vallée de l'Aude, if not in the Languedoc. The Chardonnay vines thrive in climatic conditions similar to those of Burgundy, where the grape originates; an oceanic climate with continental influences, frequent rainfall and a wide range of temperatures. Domaine de l'Aigle produces Languedoc-Roussillon wines of surprising freshness and exceptional minerality. The estate began its conversion to biodynamic methods in 2014
Tasting Notes:
A golden green color with silvery gray highlights. Expressive nose with fruity notes of white peach, opening with notes of almond paste and pastry. The palate is fresh, mineral, light and supple with a minty finish.

Château l'Hospitalet great white wine 2022 :
On the edge of the coast, the Château de l'Hospitalet overlooks the Mediterranean by a hundred meters. Benefiting from a semi-arid Mediterranean climate, with a mild winter variant, the vineyard has exceptional climatic conditions: both in terms of the duration of sunshine, the quantities of heat stored during the day by the limestone and returned to the grapes at night, and the effect of the Mediterranean Sea which moderates the temperature differences and the altitude which alleviates the summer heat. Two types of soil contribute to the aromatic complexity, finesse and elegance of this vintage: the marl-limestone soils of the Gargasian, at the foot of the cliff, rich in fossils, provide the vines with a supply of water throughout the summer despite the absence of summer rain; and the red Mediterranean soils of the Barremian formed on the compact blue-grey limestone conquered from the scrubland, allow the production of rich and concentrated wines. The grapes come from sustainable agriculture, in compliance with the Demeter biodynamic approach.
Tasting Notes:
Golden color, pale yellow. The nose is powerful and fresh with aromas of citrus fruits, white-fleshed fruits such as pear and quince, scents of garrigue and anise, with notes of toasted hazelnuts. The palate is very fine and has a beautiful minerality, with iodized notes with touches of white pepper and flint. Lots of freshness in the finish with notes of acacia honey.

Vinification et élevage
Cigalus: Cigalus is a vineyard designed for an exceptional wine and committed to biodynamics. From the planting, this vineyard was designed to produce a high-end wine: choice of quality clones and high planting density greater than 5000 vines per hectare; high espalier to obtain a high leaf surface promoting photosynthesis and maturation. The care given to the vineyard aims to obtain a healthy harvest with a moderate yield (25 hl/ha) which allows to extract the quintessence of the qualitative potential of these grapes. The harvest date is only triggered, grape variety by grape variety, when the grapes are at optimal maturity and after daily tasting of the berries. The grapes harvested by hand are subject to pneumatic pressing upon arrival at the winery. After a light static settling, part of the juice undergoes alcoholic fermentation in new barrels (70%), the rest being vinified in stainless steel vats (30%). Malolactic fermentation is carried out. Temperature control helps preserve the freshness and integrity of the aromas. Barrel aging lasts between 7 and 8 months until the spring equinox with regular stirring. After a light fining, the wine is bottled. Domaine de l'aigle Chardonnay: The vineyard is densely planted, with around 5,000 to 6,000 vines per hectare, which allows us to control the vines and produce wines of exceptional quality. The vines are trained in espaliers to ensure optimal exposure to the sun, which allows the grapes to ripen perfectly. The vines require regular care and manual maintenance. Pruning, disbudding and leaf removal are carried out according to environmentally friendly specifications. The Chardonnay grapes are harvested by hand, once they have reached their maximum maturity, and transported to the cellar in special bins. The juice is immediately extracted by a delicate pneumatic pressing, thus guaranteeing the superior quality of the must. The must is cooled and left to decant before the start of alcoholic fermentation. The wine is left to mature on fine lees and a certain proportion is transferred to oak barrels for complete malolactic fermentation. Château l'Hospitalet grands vin blanc: The harvest date is only triggered, grape variety by grape variety, when the grapes are at optimum maturity and after daily tasting of the berries. The grapes are harvested by hand and are subject to pneumatic pressing with separation of the presses upon arrival at the winery. After a light static settling, the juice undergoes alcoholic fermentation in barrels. Temperature control helps preserve the freshness and integrity of the aromas. Barrel aging lasts between 7 and 8 months until the spring equinox with regular stirring for two months. After a light fining, the wine is bottled.
