Gérard Bertrand reveals the history of the great terroirs of the South of France.
It is in 825 that we find the first written trace of the Abbey of Saint Hilaire. Located near Limoux, it is famous for having sheltered the monks who discovered the secret of the effervescence of wines.

Vinification et élevage
The grapes are picked by hand and the harvest is early, in order to maintain good acidity. Upon arrival at the cellar, the fruit is immediately pressed using a pneumatic press. The must is transferred into the vats for fermentation alcoholic, using the same process as for wines still. The wine is then transferred into sealed bottles for the second fermentation, according to the traditional method. Finally, the bottles are disgorged and the traditional dosage is very precise, in order to preserve all the freshness and balance of the wine.
Note de dégustation
The dress is golden yellow. The nose is complex and aromatic on the white flowers. We find touches honey, green apple and toast. Elegant and crisp mouth, naturally enhanced by the texture fine bubbles.

Perfect as an aperitif, served at 10°C, it goes very well also good with goat cheese (Cabécou, Pélardon, Rocamadour…) and the sweet desserts.
