Vinification et élevage
The work begins in the vineyard with a selection of the most suitable plots to produce this type of wine. The grapes are harvested largely by hand. A dual system of sorting is carried out in the vineyard and in the cellar. The winemaking is traditional and the grapes are therefore destemmed before begins the maceration phase which lasts between 3 and 4 weeks. A pressing is carried out, then leaving room for malolactic fermentation. A third of the wine is aged for 9 months in barrels, the rest being kept in vats.
Note de dégustation
The dress is deep and shiny. The nose reveals a rich palette of black fruits, licorice, truffle and black olive. The mouth offers power, volume, density and a solid structure, with a lot of freshness, elegance and already silky tannins. A fleshy wine and racy.
