Domaine de l'Aigle is a 47-hectare property beautifully located in the northernmost part of the Haute Vallée de l'Aude vineyard, between 250 and 500 meters above sea level. We produce wines of great finesse from Chardonnay and Pinot Noir.
Golden Eagle Chardonnay :
Bright and shiny yellow color. Intense nose, which develops with aeration. Its fruity aromas (pineapple, vine peach, apricot, almond) and floral (white flowers), coupled with toasted notes in its youth will delight you with their complexity and subtlety.
Pinot Royal Eagle :
Ruby red color with light purple highlights. Nose dominated by aromas of small berries (raspberry, redcurrant) very intense with some toasted notes. Soft, fruity and finely spicy palate. The tannins at the end of the mouth are fine and silky with a very long and persistent finish on the fruit.

Vinification et élevage
The vines are carefully tended, with frequent manual interventions (pruning, disbudding, leaf removal, thinning, harvesting by hand sorting), using environmentally friendly practices. The vineyard is established on espaliers, to generate an optimal leaf surface for the ripening of the grapes. The vines are planted at a relatively high density of 5,000 to 6,000 vines/Ha, which allows for optimal control of vigor. The care given to the vineyard aims to obtain a healthy harvest with a moderate yield, allowing the quintessence of the qualitative potential of the grapes to be extracted. The harvest date is only triggered when the grapes have reached their optimal maturity at daily tastings of the berries. The grapes are harvested by hand and are subjected to low-pressure pneumatic pressing in the whole harvest upon receipt at the winery. After a light cold static settling, the musts begin their alcoholic fermentation in vats and are then quickly transferred to new barrels halfway through fermentation. Malolactic fermentation is carried out according to the characteristics of the vintage. Barrel aging lasts 7 to 8 months (until the spring equinox) with regular stirring. After a light fining, the wine is bottled unfiltered. The wine is bottled for several months before being marketed.
