Vinification et élevage
Clairette lifestyle: The harvest of this ancestral grape variety is carried out in the morning between 5am and 8am in order to preserve freshness. The harvests are carried out from the beginning to the end of September by plot selection. The grapes are placed directly in the press and pressed under neutral gas in order to preserve a beautiful aromatic freshness. Only the first juices are selected. Fermentation is stopped by cold, at a controlled temperature between 13°C and 15°C to reach 12 grams of sugar. Rosé lifestyle: The plots with perfect health and with a beautiful leaf surface are carefully selected to allow the grapes to reach ideal maturity. The harvests are carried out at night to protect against oxidation. Pneumatic pressing is very gentle, only the free-run juices are selected, the presses are separated. Each grape variety is vinified separately at a temperature between 16 and 18°C to obtain a good aromatic intensity. After fermentation, the blend will reveal the complementarity of the grape varieties. Art de vivre Red: Slow maturation and late harvests (from late September to mid-October) are the secrets to obtaining ripe, healthy and concentrated grapes. This also promotes the extraction of color and aromas during fermentation and maceration. The grapes are harvested manually and transported to the cellar in a vat. The grapes are destemmed, then placed in stainless steel vats for macerations of around 15 to 20 days. Some of the wines are then racked and placed in barrels for a period of 8 months.

Art de vivre Clairette: Its elegance makes this vintage a reference of the appellation. This wine is adorned with an elegant straw yellow color adorned with green reflections that reflect its youth, a youth that is found in the aromatic palette, carried on white-fleshed fruits (pear and peach) and plum. In the extension, the palate is revealed to be fresh, elegant and harmonious. Art de vivre Rosé: Pale, bright pink color. On the nose, this wine presents aromas of small red fruits, blackcurrant and strawberry as well as floral notes of rose, and notes of grapefruit. The palate is fresh, gourmet and endowed with great aromatic persistence and a beautiful balance. Art de vivre Red: With a beautiful bright ruby red color, this complex and elegant wine offers delicious aromas of ripe red fruits, a round palate with well-balanced melted tannins.
