Vinification et élevage
Château l'Hospitalet Grand Vin blanc 2020: The harvest date is only triggered, grape variety by grape variety, when the grapes are at optimum maturity and after daily tasting of the berries. The grapes are harvested by hand and are subject to pneumatic pressing with separation of the presses upon arrival at the cellar. After a light static settling, the juice undergoes alcoholic fermentation in barrels. Temperature control helps preserve the freshness and integrity of the aromas. Aging in barrels lasts between 7 and 8 months until the spring equinox with regular stirring for two months. After a light fining, the wine is bottled. Château l'Hospitalet Grand Vin rouge 2020: The harvest date is determined by regular maturity checks, analysis of the polyphenols contained in the grape skins and daily tasting of the grapes as the harvest approaches. Picking healthy and ripe grapes is a crucial step in achieving a high level of quality. The harvest is manual, the grapes are taken to the winery within an hour. The grapes are sorted and then destemmed before being placed in a temperature-controlled vat. Each grape variety is vinified separately. The maceration period is around 20 to 25 days. At the end of winter, the wines are transferred to new 225-litre barrels for a stay of between 12 and 16 months, in the magnificent winery of l'Hospitalet (2000 barrels). The fine lees are stirred periodically. The best barrels of each grape variety are selected and assembled to produce this vintage.
