The harvest date is determined by regular maturity checks, by analyzing the polyphenols contained in the grape skins and by tasting the grapes daily as the harvest approaches. Picking healthy, ripe grapes is a crucial step in achieving a high level of quality. The harvest is manual, and the grapes are taken to the winery within an hour. The grapes are sorted and then destemmed before being placed in a temperature-controlled vat. Each grape variety is vinified separately. The maceration period is around 20 to 25 days. At the end of winter, the wines are transferred to new 225-liter barrels for a stay of between 12 and 16 months in the magnificent Hospitalet winery (2,000 barrels). The fine lees are stirred periodically. The best barrels of each grape variety are selected and assembled to produce this vintage.

The color is bright ruby. The nose, intense, is dominated by aromas of spices and red fruits (strawberry). The palate presents silky and fine tannins emphasizing the fruity freshness of this wine.

Keep away from sunlight and at a constant temperature

Serve at 16°C with rack of lamb, game birds or mature cheeses. This fleshy, harmonious wine with an elegant structure can be drunk now and promises a very promising future.
